When it comes to pizza, bagels, and pastrami on rye, New York City takes the cake. But can this sophisticated city do southern style barbeque? It sure can. Foodies who crave slow-smoked ribs and tender, juicy brisket can satisfy their “meat tooth” at Dinosaur BBQ. We caught up with Jason Ryan of Dinosaur BBQ to get the inside scoop on the smashingly popular barbeque chain that’s sweeping New York off its feet.
In 1983, our founder, John Stage, hatched the idea for Dinosaur BBQ along with his two partners at the Harley Rendezvous, a massive motorcycle gathering near Albany. The three partners believed that bikers deserved a good plate of food and that Dinosaur BBQ could provide it. For five years, Dinosaur BBQ traveled to motorcycle shows, fairs, and festivals throughout the Northeast serving barbeque to hungry bikers.
Burned out from life on the road, Dinosaur BBQ settled in downtown Syracuse in 1988 as a quick-service lunch and dinner barbeque joint. Two years later, the restaurant added a full bar, full service dining, and live music. Since then, Dinosaur BBQ has opened eight additional locations.
Our menu is rooted in the traditions of southern barbeque, but there are other factors that give our food its own distinctive character. In our opinion, that’s one of the secrets of great barbeque – committing to tradition, but finding your own stamp and signature.
The most popular menu items are the ribs and brisket. Our St. Louis style ribs are dry-rubbed, slow-smoked, and lightly glazed with our signature barbeque sauce. The brisket is smoked low and slow, hand sliced, and lightly sauced.
I think the biggest misconception people have is that that NYC doesn’t have good barbeque. We pride ourselves on using homemade, scratch ingredients and taking the time to prepare and smoke our meats.
We have a deep commitment to food quality and genuine hospitality. Each day we do two menu tastings to make sure the food is fresh, flavorful, and perfect for our guests.
